Georgian house backs

You could try the various museums in Bath such as "The Building of Bath" but I doubt you'll be able to find much.

Most housing of the late 18thC/Early 19thC was built without any real drawings, there would have been a detailed drawing for the front showing stone work but the back would have been left to the builder as it would depend on what the internal layout was.

To give an idea this is the rear of the Royal Crescent in Bath, not one property is the same at the rear

And yet the front is completely uniform.

This is the rear of  Marlborough Buildings

While this is the front.

I picked Bath as it probably has the most Georgian buildings in one place.

Maybe a silly idea, but...

Locate a suitable street, and search local authority planning hubs for  applications in that area. These may well contain plans submitted for the work, hopefully before and after. They should be good for the overall dimensions.

I don't know if submissions for listed buildings are on the same planning hubs, or whether there is a separate resource for them.

They are, Listed building consent is just another part of an application. When you apply you do so for Listed Building Consent along with plans of any changes you intend.

Something that should be borne in mind is that a very high percentage of what people perceive to be 'Georgian' houses are simply a facade over a much older property.

Near me there is 'College Farm'

From the side you can see the older building (probably timber framed underneath)

https://www.google.co.uk/maps/@52.1541491,-0.3470004,3a,75y,48.57h,95.3t/data=!3m6!1e1!3m4!1s6SmnctRaYSTnBqlddtjGYQ!2e0!7i13312!8i6656

But at the front they have tried (and failed) to apply a Palladian exterior.

I say 'failed' as the windows don't follow the true proportions of Palladian, the 1st floor should be taller but it's likely they would be higher than the existing rooms they were serving.

I visit Fournier Street in Spitalfields from time to time and have been in several of the houses and the back gardens. They are all very much altered and have various out buildings added in several cases. While the street frontage is usually very well built and maintained the rear walls have often had to be repaired just to keep them standing. One house was recently renovated and the rear wall leans outwards and is also curved. It took best part of a million to sort that one out. Ironically they could barely be given away 40 years ago but are now worth several million and very desirable properties.  View attached of No 31. Copyright of my good friend The Gentle Author. This is unusual in being largely original with no sticking out additions. I have seen plans of some of these houses but cannot find the location at the moment.
