I presume if I book the whole trip in one from DB then it'll be a through ticket?

 

yes provided the ticket is from London to <somewhere in Germany> , and NOT London to Brussels and a second ticket Brussels to Germany.

the connection time is based on using the south corridor midway down the platform no border control when I last used it db ice trains mostly go from platforms 3 to platforms 6.if your eurostar train is running late ask the on board staff for the civ railstamp and under civ rules you can travel on the next available service

I'd make another recommendation for the seat61.com site, I've use it for planning real trips, copenhagen via hamburg, koln and brussels most recently and for dreaming about alternatives to flying whenever possible, he has a lot of useful hints about through ticketing, and the CIV conditions of carriage relating to missed connections
