Gradients

There is lots of info on gradients on RMWeb, so a search will give you tons of info.  There is no 'one size fits all' answer, but as a rough guide nothing less than 1:50 would be a good starting point for 8 coach trains.  RTR diesel loco's will generally pull better than RTR steam.

 

Put 'gradients' into search and you will have enough info to keep you reading for a few days...

There's no easy answer to this one. As shallow a gradient as the space available will allow. In the past, I've temporarily laid some flex track onto a12mm MDF strip and supported one end on softwood risers of different heights. Using a loco and, in your case, 8 coaches, you can test the gradient to see when the train stalls or slips.
