I haven't properly read the OP so perhaps I should before commenting, but as to the limited question - why do we model then I think the topic is much much wider than the model railway community.
It would seem to have roots in antiquity. Look at the beautiful models in King Tuts tomb. Now I know they were designed for a specific purpose - for use in the after life - but perhaps there is a fundamental human desire to re-create the real world in other forms. In essence art often seeks to that.
Oh dear heady stuff for a Tuesday morning time to sit down for coffee.

I may have missed this in your original post (and apologies if I have) but you almost need to ask the fundamental question "what is modelling?", and how this can be distinguished from grown men (or indeed young boys) playing with toy trains. Is there a clear defining line, or is it more fuzzy?

I was always drawn as a child to what was described in a book(I think an OS Nock book called Railways, the years of pre-eminence) as "Golsdorf's masterpiece", a 2-6-4 tender engine built for the Austrian Imperial railwway. A quick scout on google bought up class 310 as a better description.
I've always thought the Schools Class had a certain power and impressiveness about them - especially before being fitted with smoke deflectors.
