Make a backup of your iPhone on your iCloud, and then when you're setting up your new phone, hold the two phones in close proximity - the new iPhone will then be set up using the iCloud back up of your old phone. Plenty of Youtube tutorials if that makes no sense, it takes literally 2 minutes and is easier than faffing with iTunes. 

I do hope that this isn’t the way of the future. There’s not enough room for an iCloud account under my tinfoil hat. 

That might have worked if my iCloud account had more than 5GB and my old phone contents were less than 25!
