    Just to add on this I found a German modellers forum where someone made intermediate coaches from converting a TGV coach with new paint and a new roof.     I have seen on shapeways someone selling HO scale eurostar intermediate coaches, I don't know how well they would work with OO eurostar coaches but it is worth considering or asking the creator for OO versions. https://www.shapeways.com/shops/kennoutch-s-trains
