Slow simmer or rolling boil?

Initial boil followed by a slow simmer lid on, liquids being topped up as necessary.

On the 25th, strain off and keep the liquor, its good* for slugs and snails in the garden....

* Or bad, if you're a slug or snail.  On a similar note, my Great Aunt used to steep her ciggy butts in water for weeks, then use the resulting liquid as a garden insecticide.  I believe this practice is now deprecated...
