Where does/did the Chef du Train ride on a LH train?

They hang out somewhere in the middle, and make much of walking up and down the train a couple of times, conspicuously failing to check tickets. Or at least, on my several times a year TER trips into Paris and back, that is the pattern.

Depends on the era and coach type. Some coaches (usualy those built with at least occasional international or overnight service in mind)  have compartments built in. Otherwise, most loco hauled rakes included at least one compartment coach (all compartment stock the further you go back in time of course) which the crew would use it for crew only and lock the door. In German stock both types of crew accom would be dubbed 'dienstabteil' and in France 'locale de service'
