  1. Is there any point in listing old Hornby/Bachmann boxes on eBay? I see lots for sale but not sure how many people buy them, or if I should just throw it all in the recycling?

I suppose, if someone like me wanted to 'up' the value of unboxed items, I'd find it useful to be able to buy an empty box, but there can't be that many people like me around. Also, when the cost of buying the box has to to be added to the item, the sale price of said item then has to be higher. I think they'd probably be slow sellers, too, so having to be constantly relisted.

Go to the sold listing on ebay and search Hornby empty box.

Typically £5 or so for a good loco box.

Although there is a box for a Rebuilt MN that sold for £29.50...………..

I have only ever listed one empty box in eBay and it sold for around £10, within a week. There are lots of unboxed models for sale at shows, maybe people want a box to make their latest purchase "complete". So I'd list your boxes, see what happens.
